Cayman Style Curry Lobster Recipe


Serves: 4


2 lbs fresh lobster meat (or tail meat) and cut into 1 1/2 inch cubes
1.25 fl oz oil
2 onions, chopped
1/4 shin of a scotch bonnet pepper finely chopped up
2 cloves garlic, chopped
2 tablespoons curry powder
1 tomato, sliced or chopped
1/2 sweet pepper chopped
1/4 teaspoon salt
black pepper to taste
1 1/2 cups water

Preparation and Cooking

Heat oil. Add the curry powder and continue to stir and fry for two minutes. Add water and then add the tomatoes, sweet peppers, salt, pepper, and other seasonings. Bring to a boil then reduce. Add chunks of lobster meat. Heat and simmer for 10 minutes or until the meat are cooked.

Best served with white rice.
