Jerk Chicken or Wings (Oven Baked Cayman Islands Style)
Jerk Chicken or wings, a spicy grilled-meat dish most associated with Jamaica but common throughout the Caribbean and the Cayman Islands.

 

Jerk is a method of a grilled-meat or seafood dish most associated with Jamaica but common throughout the Caribbean. Jerk refers to a style of cooking in which the main ingredient—which most often is chicken but may also be Beef, pork, goat, boar, seafood or vegetables—is coated in spices and slow-cooked over a fire or grill traditionally composed of green pimento wood positioned over burning coals; the resulting smoke is key to the flavor of the dish. The cuisine had its origins with the Taino Indians, who developed the jerk method to preserve meats by marinading and later taught it to runaway African slaves, who in turn adapted it in creating jerk chicken. The word jerk reportedly stems from the Spanish charqui, meaning dried strips of meat similar to the modern-day jerky.

 

INGREDIENTS 

Serves 4 – 6

  • 4 lbs Chicken ( Whichever parts you prefer)
  • 12-14 Tablespoons Jerk Seasoning/Marinade and add garlic, liquid smoke, onion powder, green scallion, and Scotch Bonnet peppers to desired taste. Marinate overnight.
  • Honey (optional to taste)
  • Lemon/Lime juice or Vinegar
  • 2 Teaspoons Garlic Salt (optional)
  • 2 Teaspoons Onion Powder (optional)
  • 2 Teaspoons Paprika

 

 

METHOD

  1. Clean and wash the chicken with lime/lemon juice or vinegar
  2. Whole pieces of chickens are best so it does not dry out. The skin also provides flavor.
  3. Pour the Jerk seasoning in a bowl.
  4. Add Garlic Salt, Paprika cut up fine scallion and peppers or put in a food processor or stir in the added ingredients
  5. Rub the chicken with the Jerk Seasoning marinade
  6. Be sure to rub under skin and in cavities
  7. Marinate overnight in a ziplock bag. (Pour any leftover seasoning in the ziplock bag)
  8. Preheat oven to 320ºF
  9. Place marinated chicken in a foil pan and cover with foil. baste the Chicken every 1/2 hour with leftover Jerk Marinade and sauce from Chicken and also flip over Chicken. Cover back with the same foil.
  10. Bake the chicken for 2 hours until done.
  11. Chop meat into pieces, and serve.
  12. Jerk Chicken is served traditionally with any of the following Jamaican, Hard dough bread w/ ketchup or with Jamaican Rice and Peas and Fried ripe plantain.
